So i last played the Sigma games when they got released. I also played the OG versions back in the day as well and i remember not liking the Sigma versions nearly as much but i have yet to find a comprehensive list online of every single change that was made in these versions. Heck it seems like most have just forgotten about these versions. Is there a list somewhere that lists every change, both minor and major?

Sigma games are easier, have more playable characters, less gore, and generally speaking the hardcore NG fanbase do not like it that much. They're not bad mind you, just not the definitive way to play the NG games.

I thought Ninja Gaiden Sigma had more blood spatter effects than the original Ninja Gaiden Black?

I know they changed the lighting a lot in the first game. Many might like it more, but I preferred how it looked vanilla.

Sigma 1 wasn't changed that much, but it did remove the Ore farming, and some other puzzles to get weapons. You also had to play with Rachel which wasn't that good. Though she did fight that shady detective guy.
Sigma 2 had far less enemies, no gore, no moves to buy (I think you started out with the full set), some heavily altered bosses and generally felt wrong because the stages felt at times completely forsaken. And some new bossfights against fucking statues.
Sigma 1 isn't bad, though Black on 360 BC was a better choice. Sigma 2 is terrible.

From what I understood, Sigma 2's changes are more disliked by the hardcore fanbase. I think Sigma 2 does away with dismemberments or something.

Sigma 1 is easier in some small but significant ways. Off the top of my head:
-Potions can be used in real-time, meaning grab deaths are entirely avoidable now. If you're grabbed while at low HP, you can just pop a potion and eat the hit.
-The Bow can be used in mid-air. Many enemies have no way to deal with a Ryu who roll-jumps in between explosive arrow shots. Bosses like the Tank and even Fiend Ryu fall to this strategy IIRC.
I think possibly the Berserker enemy was adjusted to be more susceptible to counter-hit strategies, but I don't fully recall. It's been a long time since I've played both Sigma 1 and Black.

You can still use OT's, you have to. But it looks dumb without gore. Its like slashing puppets.

Ah, thanks for correcting me. I just remembered hearing JTB complain that while you could still do OTs, there was something "different" about them.

Sigma 2 had gore, it just didn't have the comically over the top blood spray effects. You could still cut people's heads off and cut them in half, it just didn't spray ridiculous amounts of blood everywhere and slow the frame rate to a crawl like in Vanilla.
With the exception of some of the "play as the female characters" bosses, NGS2 was better than base NG2.

Vanilla needed a bit more time in the oven. I think there were some internal issues and Itagaki was also suspected of something nasty. Its too bad because I think a more balanced and patched up vanilla NG2 is the best NG game out there. I really liked it as it was already, the game was extremely visceral. Tecmo never bothered to remaster these games so far. But if they do, I hope its Black and vanilla 2.

Yeah, I got the feeling that Itagaki's sexual harassment lawsuit (among other things) led him to check out partway through 2's development. I really felt like it was an uneven, slapdash mess of a game, with enemy layouts and boss battles having nowhere near the same level of care and thought put into them as NG1 or NGB.
Replaying it as Sigma 2 made it a lot more enjoyable except for those godawful fights where you had to play as Rachel. Woof.

Would the Sigma games be worth playing to get into the franchise? I've always been semi-interested in trying it out and a local game store has Sigma 1 and 2 on PS3.

Yes definitely. Black and NG2 are better but if you like character action games, both Sigmas are still great games.

Is the original Xbox still not emulated properly? Because mine died last year before I could play Ninja Gaiden Black. I only played Sigma on PS3.

Black is available on the Xbox One BC via Emulation which works well. I don't think there is a Xbox Emulator available for download that works.
